Elderflower wine?
Elderflower wine?
Hi everyone, ive started some elderflower wine (never made wine before) im following the recipe from the site, im at the early stage of leaving the boiled water on the flowers, and after 3 days its gone green! is this right? also theres no mention of adding any nutriant in the recipe! is there a reason for this? surely the yeast is gonna want this? thanks for anyhelp

I've seen the "gone green" cry go up before and, although I've never had it myself, the best advice appears to be to ignore it - it'll go away with fermentation. As for nutrient, you can take your pick. I would certainly add it, but I'm impatient. If you can wait a little longer for a yeast colony to build up, then not adding nutrient also works - although the risk of infection in the meantime increases.

The risk of infection I'm talking about is nothing to panic about - there is always a risk of something going wrong in any recipe, whether for wine or for cod and chips. A hundred years ago (the no nutrient period), one gallon of home made wine in ten went down the toilet. Thirty years ago (when nutrient had only just been thought of), it was one gallon in twenty. Nowadays, it SHOULD be less than one gallon in a hundred - if you do the whole cleanliness/nutrient/vitamin B routine. Not everyone does, but they still get good results most of the time.

Mine went green last year, and I didn't add any nutrient: It turned out the best wine i'd ever made!
