Abundance of asparagus

Abundance of asparagus

A friendly farmer has given us a couple of boxes of bent asparagus and I was wonder if people had a suggestion for recipes
So far I've tried
1. Soup (cream & without)
2. Chicken and aspargus pie
3. asparagus soldiers in egg

Has anyone got any other ideas before I eat soup for the next 30 years?

Asparagus risotto. Use the woody bit you break off the bottom to make the stock and bung the tender stalks into the rice in the last few minutes before serving. (Salivating at the thought of it!)

Asparagus, walnut and courgette pasta!

fry finely chopped onion and garlic with olive oil in a pan, add finely chopped courgettes and asparagus pieces. add some cream and if you have walnut liquoer, throw in chopped walnuts, stir and mix under your cooked pasta :) YUMM!


Asparagus, salmon quiche

make a quiche base (shortcrust pastry) fill quiche with pieces of salmon, asparagus and sweet peas. mix one egg with some herbs, spices and cream, pour into the quiche and bake
