I've read about dandelion coffee, and may try it. But have you had a thread on dandelion leaves?
I am assembling large healthy dandelions (as I dig out my allotments after enforced neglect) into a small patch, and upending black pots lined with black plastic over them.
The result is pale greenish, tender, sweet leaves to add to a mixed salad. It gives me a certain pleasure to eat my enemies, and it is very little trouble. Not many salad leaves around at the moment.

add them , along with nettles to make a pesto.
use the flowers to make a dandelion infused oil

I like them in a salad too ... just had a look at the greenwoman lnk and I love the sound of the infused oil thanks for that

On the Edible Garden this week she dipped the flowers into pancake batter and fried in butter. Sounds nice, just need an egg.

I tried dandelion leaves in a salad a little while ago for the first time, and like them. OH had some on a sandwich, and liked them because I didn't tell him what they are - he's a bit of a wimp about trying things I've foraged.
