slow cooking

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

slow cooking

Post: # 185517Post paul123456 »

Hello there ,

a question about slow cooking .
We use a stove that burns wood to cook , when we put a roast in the oven and in takes 6 hours or more ,
that is slow cooking .?
When we boil potatoes or pasta , vegetables on the hob or at least try to boil , the water is not always boiling
but very hot .
The question is , if the water is near boiling point will that vegetables and potatoes be cooked , it will take longer , but is this also slow cooking .
Anyone experience ?

regards ,

Paul

I would say so yes, I have the same issues sometimes with my rayburn if the wind is in the wrong direction

i belong to a world war WWII Re-Enactment Group.
For the last 5 years i have been cooking on a 1941 US field cooker which has petrol burners, that have not been used just in case. Instead have a 2 ring gas burner and i can tell you that everything takes alot longer to cook, it takes quite along time to actually warm up before it starts cooking and then give that extra hour.
Usually there is a beer tent, so give 2,3 or 4 pints time you get back its almost ready to serve up to the hungry troops.
5 years on, i have got it to a tee. I feed between 15-25 are normal turnout, sometimes 60-70 when arranged.
This year we have just aquired US trailer cooker which is wood burner but has got some other oil burners that i have not used yet.
So it will cook eventually but give it more time, depending on what you are having.
I must admit i try and cook a roast with all the trimmings for my troops and they appreciate it
