Very quick bread question

I am supposed to be baking bread this evening by the time my wife gets home.

I don't have any sugar :pale:

Can I use honey and if so how much compared to sugar

Sugar? What do you need that for? My standard recipe is strong flour / water / yeast / salt in a 100:70:2:2 ratio (eg. for 500g flour, you use 350g water, 10g yeast and 10g salt). Sugar is primarily if you want to boost the work of the yeast but, given a bit of time, bread does very well without it.

You don't need sugar or honey to bake great bread, but if you add a bit it gives the yeast a little boost. If I'm leaving my bread to do it's first rise overnight (creating the 'sponge' some people call it), I add a bit of sugar and use cold water. If I forget to start it off on the night and have to start it in a morning and want to get it baked asap, I use honey instead (about the same amount), and use warm water. Maybe I'm being daft, but it seems to work. Perhaps it's just the temperature that makes the difference :dontknow:

When making bread you do not have to have warmth or sugar for yeast to work. Without them it will take longer but the flavours will develop.
Sometimes it is nice to bang out a quick loaf of bread, but if you want flavour you have to slow things down by the use of pre-ferments, less yeast, lower temperatures and even refrigeration for part of the process.
