pickled red cabbage

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

pickled red cabbage

There were a couple of red cabbages growing on the allotment so i decided to pickle them.
I got a recipe off the net which included onions which i have some red onions hanging in the shed.

The red cabbage was sliced but the onions were left whole at this stage.
Then i put them in a pan and covered them with brine for 24 hours (i guess about 100g salt)
I will finish tomorrow :wave:

It looks a very interesting recipe thus far - I've never had red cabbage with onion in. I like the idea very much. So I second the call for a recipe. :lol:

Sorry to barge into this post - and not with a pickled cabbage recipe either - but nonetheless, if you have too much red cabbage, this is great for making a huge batch (in a casserole) and then freezing into individual portions - it re-heats in the microwave really well and was DELICIOUS:

The sliced cabbage and onions were rinsed and dried, the onion sliced then packed in layers into jars

The red wine vinegar was then added.

This is the link to the original recipe i looked at. I don't usually soak my cabbage in brine and i used the recipe as a loose guide and made the rest up as i went along. :wave:

Let me know how it turns out, i made some from the "jams pickels and chutneys" book and it just tastes like very sour salty cabbage! - the book says they know of a lady who sits and eats and entire jar at a time which i just cant believe given my end result!
