I have had Snugbury's diabetic ice-cream in the past ... it uses various sweetners. There is more information on their website http://www.snugburys.co.uk/diabetic.htm

Here you go Al.

Banana Choc Ice cream

2 bars choc of choice - we use 70% cocoa plain chocolate.
2 bananas
1 litre of milk of choice (I usually make it for my gal so use soya milk, but cow is good :lol: )

Melt one bar of chocolate in microwave or over double boiler.
Break the other into largeish pieces
Peel bananas :roll:
Chuck milk, banans and melted chocolate into blender and blend until smooth. Add chocolate pieces and blend briefly to chop them finer - you want bits in your ice cream.
Freeze as you would normally do ice cream.

Infinitely variable - the only thing to remember is to use a sweet fruit like banana or mango, as the chocolate's not that sweet. But you can add peanut butter or whatever takes your fancy.

No artificial sweeteners either.

Right, onto freecycle I go!

Will have to try soya milk though, as having a little dairy break at the moment.
