funnily enough I bought a bag of cranberries before christmas intending to make something, umm, christmasy, but either lost the original recipe or just changed my mind...whatever... I never got around to using them until yesterday. And in the end I followed the idea on the back of the packet...which was... Cranberry and Apple Sauce (Ok not strictly a chutney but...)
Add 300grams fresh cranberries to a suacepan with 1 chopped and peeled bramley apple, stir in 75g sugar and simmer until fruit has softened.
I did all of the above, although I didn't use a bramlely apple, and I used soft brown sugar. I sterilised a jam jar with boiling water, I also added some water (about a cup) to the mix, not at first, but towards the end as I thought it a bit too thick....then I scooped the whole lot into the jar sealed it and sterilised it...
There was some left over which we ate with our New Years meal, and it was delicious...
