Could you just crochet the stem? Just work a very small amount of chains (6-7) in the round coming out of the centre of the hat? then you could, if you felt it needed it, stuff it with a little wadding, or just leave it depending on how tight the tube is then draw up the stitches over the top of the tube, that could make a stem, and it is totally undoable if you don't like it.
