need a good green tomato chutney recipe

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Last year I made a fantastic green tomato chutney, I took bits & bobs from a number of different recipes I found on line & the end result was a sweet, spicy chutney that got devoured within days (even though it's meant to improve with age). Like an idiot I didn't write down the ingredients I used.

I know the basic ingredients were Green tomatoes, apples, sultanas, onion, vinegar & sugar. But I can't remember what spices I used, I only know it had got a real kick. Anyone out there got a really great recipe?

I like this one which my Great Aunt used to make all the time. It is really tasty but it is not spicy if that is what you are looking for.

ingredients:

1½ lb onions
1½ lb green tomatoes
1lb apples
1½ lb sugar
1½ pt vinegar
½ oz ground ginger
½ tsp turmeric
1tsp salt
3tbsp cornflour

method:

Chop vegetables and fruit. Boil in 1 pint of vinegar and sugar for 5 minutes. Mix dry ingredients with the rest of vinegar. Add and boil for about 5 minutes while stirring. If it doesn't look thick enough just boil for a bit longer.

turmeric! I'm sure I added turmeric as it had a slight curry flavour to it! I might use that & add ginger & chilli to give it a bit more of a kick! thanks :mrgreen:

also a recipe from my great aunt with similar ingredients to above...

2lb tomatoes
1/2 lb apples
1/2 lb onions
1/2 lb brown sugar
1 tbsp mustard seeds
1 tsp ground ginger
1 tsp cayenne pepper
1 tbsp salt
1/2 lb sultanas
8-10 red chillies
2 inch piece ginger
3/4 pint vinegar

Wrap the chillies and ginger in muslin cloth and suspend in the pan whilst cooking.

i wonder about using honey? i suppose it depends if u still want a fairly sweet chutney.

Thanks, Ayisha, no I do not have a sweet tooth, that's the problem, but I'm worried about not having any sugar in terms of preserving. Will I have to compensate for no sugar by having loads of vinegar and it then being too much the other way. Perhaps I will have to suck it and see, a bit of honey and a bit more vinegar. It's just that I'm not sure whether botulism is a problem with chutneys that do not have enough sugar/vinegar.

I'm sure there's enough vinegar in it to preserve it without sugar. Why not start without sugar & then after it's cooked down to mush just add a little sugar at a time until you get the flavour you want. I'm sure if you use a recipe with raisins & apples in you'll get enough flavour without sugar, you may just need a bit to counteract the vinegary taste.
