Freezing Potato.

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Freezing Potato.

Can you put soups/casseroles containing potato into the freezer (like potato and leek soup etc.)?
I've seen recipes saying not to put cooked potato into the freezer because it goes mushy and isn't very nice - any thoughts please, thanks.

Yes, of course you can ... or at least we do.
I can't see that going "mushy" is a problem anyway as potato cooked in a soup or stew is pretty mushy to start with.

I have also frozen fish cakes based on mashed potato and that's just fine too.

my question is why freeze potato? Store them and add them later to keep the freezer from filling up too much. If you are thinking of quick meal - I do it with loads of vegs but I still keep out the potato. The only time I freeze potato is par cooked chips made in say January when the stored potaotes (and parsnips) are getting a bit "tired". Frozen mashed potato is another alternative but the chips are the ones that get eaten!!

It seems that somewhere in my dark and fuzzy past I'd read about not freezing potato (I curse whoever it was!) and it just stuck in there............I'd steered away from freezing it for no reason then doh!
For that reason I've never frozen fish cakes or put the topping on shepherds pie etc., but I will now for sure. Thanks folks, once I've got some room in the freezer I'll get on with it.

I make soup for my OH to take to work and freeze it in flask sized portions.
I can just imagine her peeling and dicing a potato and then cooking it, first thing every morning in the depths of winter.
Besides how do you make a leek and potato soup without the potato ?
Or a chowder ?

i always make more soup than we need and freeze the rest.

and when you just have one portion of shepherds pie left, it can be boxed up and frozen and then himself takes it to work for lunch

We freeze mash and roast spuds.
It's great as we spend one free evening cooking loads of both, batch them up into portions, and on those nights when you are really too knackered to do anything you can have roast spuds or mash with a minimum of effort. :flower:
