What to do with all this beetroot?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Slice it into thin matchsticks and sling it in a stir fry. Then add the leaf stalks and chiffonade the leaves before adding them for the last minute. Interesting colour changes occur ........

But actually, I've been wanting to ask this rather delicate question but wasn't sure whether I could or not......

Has anyone noticed that if you eat a lot of beetroot that when it, er, comes out the other end it can be a rather alarming colour? :shock: :pale: :oops:

Funky purple poo! :lol: :lol: Although it does look rather like you've had an internal bleed! :shock:
I think the most alraming we had was when the kids were small they had a Thomas the Tank Engine birthday cake and their poo turned emerald green! :shock: :lol:

So it's not just me then - PHEW!!! :mrgreen: I wasn't really worried, cos I've never seen blood that colour but it was quite amusing and a teensy bit alarming the first time. Funny how shop bought beetroot doesn't seem to do that to me, or maybe I am just eating twice as much as I would normally do!

Chiffonade means rolling a bunch of leaves into a cigar shape and slicing across to produce long, thin, shreds of spinach/beetroot leaf/cabbage etc. Just an affectation to present greens really,

In the community house I've recently moved into, we have a surfeit of beetroot at the moment - a good amount growing in the garden and they keep on getting delivered with the weekly veg box, so I've been considering this question myself.

Over the weekend, my wife made a delicious borsch (beetroot soup) and I cooked up some beetroot bread - I can dig up recipes for both if you would like.

I remember thinking one of my chickens had a huge problem as I'd found big patches of red 'blood' in the snow and saw bits on her feathers. Then I realised she'd eaten some beetroot. Phew - panic over.
