Bananas

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Aha I knew it another weirdo! My family think I am obscene for liking banana and marmite sandwiches but I think banana and branston sounds weirder - must give it a try sometime and gross them all out :pukeright:
Oh yuk banana and marmite sounds revolting :lol: (though I might give it a try just to see my OH's face!). The sour tanginess of Branston complements the sweetness of banana - I don't actually like B. pickle very much with cheese or anything else!

I have just tried it. First of all I get sweet and salty together as would be expected, but then a slightly unpleasant bitterness comes through that I've never noticed with marmite before. I don't like it :( But at least I tried. :mrgreen:

7oz (200g) plain flour,
2 1/4 tsp baking powder,
1/2 tsp salt,
3/4 tsp ground cinnamon,
4 tbsp wheat germ (I used brown bread flour)
2 1/2 oz (75g) butter or marg at room temp,
4oz (115g) caster sugar,
3/4 tsp grated lemon zest,
3 ripe bananas,
2 eggs, beaten to mix.

Preheat oven to 350 degrees f / 180 degrees c, grease and flour 8 1/2 x 4 1/2 inch (21x11 cm) loaf tin.
Sift flour, baking powder, salt, cinnamon,
into a bowl, add wheat germ.
In another bowl, combine the butter, sugar and lemon zest, beat until mixture is light and fluffy,
add mashed banana and eggs to sugar and butter mix, mix well.
Add dry ingredients and blend quickly and evenly,
Cool in pan for 5 mins then turn out onto wire rack.
