Baked Mushrooms

I have some large mushrooms that I was going to stuff for the girls and I tonight. Slight problem I have not done this before, and haven't a clue what to stuff them with. Any ideas please?

I usually stuff mine with cous cous and vegetables and top with cheese. Or sometimes risotto topped with tomatoes and cheese.

Thanks both, I will try both of these ideas in the future.

In the end I did spring onions, bread crumbs, a little olive oil and blue cheese. I thought that they were lovely, but neither of the girls liked them. Oh well lol.

I stuf mine as follows:

Remove the stalks from the mushroooms and chop them finely. Gently fry an onion and some garlic in a pan. Add the mushroom bits, a finely chopped red pepper and continue to fry until everything's looking cooked. Remove from the heat and add some ground nuts (almonds are fine, walnuts are good, cashews or pine nuts are wonderful), some tomato puree, some mixed herbs and a little water - basically mix everything together until you have a stuffing that isn't too liquid, too solid or too crumbly. Pile it onto the mushrooms. Top with some grated cheese if you like. Bake at 175 for around 20-30 mins.
