Does anyone have a good samosa recipe? or can anyone direct me to a good indian cookery website (tried and tested preferably)

Good old Madhur Jaffrey's cook book!
Pastry
1/2 Lb plain flour
1/2 tsp salt
4 tbsp veg oil plus a bit more
4 tbsp water

Put flour salt and oil into a bowl and rub til bread crumbs. Add water to make stiff dough. Knead for about 10 mins until smooth. Make a ball and rub it with about 1/4 tsp oil and put into a plastic bag. Set aside for 30 mins.

Filling
1 lb potatoes boiled in skins
4 tbsp veg oil
1 med onion finely chopped
6oz peas (defrosted)
1 tbsp grated fresh ginger
1 fresh hot chilli finely chopped
3 tbs finely chopped coriander
3 tbsp water
1 1/2 tsp salt - or to taste
1 tsp ground coriander seeds
1 tsp garam masala
1 tsp roasted cumin seeds
1/4 tsp cayenne
2 tbsp lemon juice
Peel potatoes & cut into 1/4 dice. Heat oil in large frying pan. Add onions & brown. Add peas, ginger, green chilli, fresh coriander & 3 tbsp water. cover & simmer til peas are cooked. Add potatoes, salt, coriander, cumin, cayenne & lemon juice. Cook for 3-4 mins on low heat.

Make dough into 8 balls. Roll out, make cones, fill with potato mix, seal the edges. Deep fry

Yay! thanks guys... I'll try the Madhur Jaffery one first (got her name on my birthday book list.... still)

Can't think of a better way to use up all those home grown potatoes and peas :mrgreen:

Coincimental!
I just made Samosas and they were AWESOME!
Check out my blog link in mah siggy.
Though I had leftover Curry to use up so I used that as the filling instead but I'm making these again with the given recipe on the video 'cos Manjula's Dough was AMAZING so I figure her filling will be too!
