Chicken Pate

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Chicken Pate

I made this on sunday and its gorgeous.

6 tablespoons chicken stock. (made from the leftover carcass from sunday dinner)
6 tablespoons chopped cooked chicken (Picked off the carcass)
3 tablespoons melted butter
1/4 teaspoon salt.

Put the stock and chicken in a pan and bring to the boil.
take off the heat and mix in the melted butter and salt.
Blitz in food processer or use hand blitzer thingy.
put in sterile jars (2 small) or ramkin dish, cover and leave to cool.
refridgerate. or freeze


the mixture is runny but sets as it cools.
it really is extremely nice.
Its Good to be green but even better to be self sufficient.

Next time, Craig, add a spoonful of chopped tarragon (or pinch of dried), some black pepper and a squeeze of lemon juice. It'll transform from extremely nice - to sublime :lol:

I have just made the pate with the tarragon, pepper and lemon juice. i also cooked the chicken carcass with a sprig of fresh rosemary for the stock.
Can't wait to have some on my home made bread :thumbright:
