3+ Meals for 4 from 1 Chicken

We keep trying different ways to stretch a whole chicken into 3 or 4 meals.

Here's a favourite set of meals:

Set 1:

Meal 1
Chicken roasted with potatoes, carrots, and onions
Some kind of cooked greens

Meal 2
Chicken pot pie
Salad featuring in season vegetables

Meal 3
Chicken vegetable soup
Toast points with chicken liver pate

One of our faves for using up chicken bits is Nasi Goreng:

They can also go in quiche and curry, and don't forget to use the carcass for soup

We just eat cold roast chicken with salad, along with left over cold roast parsnips, onions, stuffing, bacon, chipolatas and it's just as heavenly as the hot roast.

Nobody else seems to eat cold roast chicken just as is anymore, which puzzles me. Everyone seems to need to DO something with it. :scratch:

Dear Amaranth,

Boiling up the carcase to make stock is the basis for a good risotto. And I agree with MMM, cold roast chicken breast with chips or bubble and squeak and chutney is a quick, no fuss way of using up the left-overs.

I got asked to run a frugal eating course at our local sure start centre. This is something that we covered, I was so amazed how many people roast a chook then throw the remains away.

This is my favorite:

Roast

Chicken Noodle soup (using stock and a small amount of meat)

Rissotto (using stock and meat)

Chicken and Mushroom pie

However this week I have more left over chicken and salmon than I know what to do with, last night was salmon fishcakes. Today it will be chicken sandwiches and then rissotto.
Stay at home Mummy to Orin 8, Trixie 6 and Temogen 4 . Also three Chickens Dottie, Poppy and Dr Mumbo. Three cats called Flossie and Pickle and Lexi.

I forgot to say if we didn't eat cold roast meat we wouldn't have any need for any of the pickles that I make! :lol:

:lol: Ours goes even further these days since the kids left home - mostly we do 1. roast, 2.slice off for sandwiches (stashed away in fridge), 3.slices with bubble squeek and pickles 4. pick off for curry 5. boil up and pick off again for pie 5. soup (often freeze this) 6.(depending on size) freeze legs for a store 'roast' later.

Thanks Snapdragon!! I see that your in Wiltshire too. If you know a group etc that would like me to organise one for them, I would be more than happy. I don't charge.

I also run a short course on how to make your own baby food, I used to struggle to believe that I had to explain how to peel veggies and boil them :roll:

After a roast on Sunday I usually have the rest of the meat in sandwiches for lunch on Monday, Tuesday, maybe even Wednesday.

The leftover veg goes in to to either a good old fashioned bubble-and-squeak, or add an egg to make a good thick Spanish omelette. That's assuming someone hasn't come down in the middle of the night and eaten all the cold roast potatoes. :scratch:
