You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Vegetable Pate

I would love to try some new recipes for vegetable pates. I'd especially like to try some bean based ones.

Anyone have a favourite recipe?

Watching this with interest - vegetable pate has literally never occurred to me, and the boyfriend is always looking for new things to put on toast!

The lentil and tomato one looks delicious. Will try that with some of the ripe summer tomatoes. Do canned Italian plum tomatoes work for the recipe too?

In addition to pates, recipes for bean spreads would be welcomed too.

A slightly different Lentil and Tomato one here:

1 large onion
2 stick Celery
2 Large Carrots
4 Large Cloves Garlic

:: Blend until very finely chopped and then fry off in a pan until soft ::

4 Cups Lentils

:: Fry for a few minutes and then add a little strong vegetable stock at a time until the lentils are cooked through and the mixture is dry ::

:: Leave to cool and place in a blender with about 4tbsp Tomato Puree ::

::Blend until purees and pour into ramekins or a large dish and chill ::

This is quite a soft pate / spread but after chilling becomes a little more firm but not overly.

Really nice on hot buttered toast :)

Here are a couple of my faves - both vegan - one 'beany' and one 'nutty'

Spicy Bean Pate

1 can (economy!) kidney beans - drained & rinsed
1 small onion - chopped
2 cloves garlic - chopped
1 squidgy tomato - chopped
1/2 tsp dried mixed herbs
chilli powder to taste
a pinch Marigold bouillon powder
black pepper to taste
A little fresh parsley or coriander to garnish
Method:
Slowly cook the onion & garlic in a little oil/water until translucent,add tomato & mixed herbs, chilli & b.powder&beans.Cook gently, stirring frequently for 10mins.Cool and process to desired consistency.Spoon into bowl&garnish with fresh herbs.

Carrot & Cashew Pate

2 medium grated carrots
1 clove chopped garlic
2 tsps tahini
1/2 deseeded green chilli
a handful fresh parsley
200gr unsalted cashews
Method:
Process all but a tablespoon of nuts until smooth. Add nuts and pulse to break up a bit.This is quite stiff - you could add a little olive oil or even water to make it softer.Sprinkle with freshly ground bl.pepper.
