chocolate berry cheesecake

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

chocolate berry cheesecake

Chocolate & summer berry cheesecake
150g digestive biscuits
75g unsalted butter
300g soft cheese (philidelphia or similar)
200ml double cream
100g sugar
100g dark chocolate
150g of mixed berries (I used strawberries, blackcurrants & redcurrants)

Melt the butter & smash the digestives into crumbs & mix together, firm into the bottom of a cake tin with removable base with a piece of greaseproof paper in the bottom, mix the soft cheese, double cream & sugar, melt the chocolate & pour in add the fruit & stir. Place on top of the biscuit base & leave in the fridge for at least 3 hours to set. lick spoon. after it's set get a tin of of beans, tomatoes or what have you place on surface, place cake tin on top of it & slowly push the base up, remove greaseproof paper& serve. Start stabbing people with a fork so you can have the last slice.

That sounds fab - currently using up tons of mulberries via the cheesecake method :cheers: never thought I could add choc as well :thumbleft:

If you want to be really filthy try burning the butter - that is melting it until it turns golden, you then have to strain it as it will have dark specks, but it hasa glorious smokey taste to it.
