So many eggs!

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

My chooks seem to have gone into over drive! Remembering that eggs this fresh don't peel too well when hard boiled - does anyone have any suggestions as to what to do with them? I don't think we can face another frittata!

I worked out how to peel fresh boiled eggs - crack them gently in various places and put them in between your palms and roll them, with just a little bit of pressure then peel them gently. It seems to separate the membrane from the main portion of the egg, when you peel, just ensure you are peeling off that membrane, rather than the shell.

I always ensure I've got some old eggs for hard boiling! But it's been a while since I had a glut of hen eggs. :lol:

Scrambled egg sandwiches
Egg salad in sandwiches or tomatoes
Age some and hardboil them for many different flavors of deviled eggs
Chinese tea eggs--for an example see

Potato cakes--mash potatoes and season as usual(or add extra flavorings)
--Mix beaten egg in leftover poatoes.
--Dip in beaten egg and fry on both sides
French toast
Egg drop soup
Creme Brulee with yolks plus anglefood cake with whites
Ice cream (be sure to cook the custard to make the eggs safe before making the icecream)
Different frittatas than what you have been making lately
Quick breads (non yeast breads)

Trade with friends for fruit, vegetables, meat, fish, nuts, etc

I've just had a look at the chinese eggs - they look fab!
Since I posted I've managed to learn how to make quiche :shock: so that's lots of them used up. Sadly none of my friends actually grow stuff to eat so swapping is out! But I did give some to friends at work and they loved them :mrgreen:
