Duck Eggs?

Duck Eggs?

Hiya,

I have just ben given 6 duck eggs... Now I do want one soft boiled with toasty soldiers :cheers: but what can i do with the other 5? I don't want to waste them in baking (cakes etc) but I am at a loss as to what I can do with them.

Ideas please :shock:

Scrambled, fried, omelette, quiche - anything!!

I gave hubby his first ever duck egg as a fried egg with his bacon, sausage, mushies & toast one morning.....
Afterwards he asked when were we going to have the duck eggs.... :roll:

Ooooo... I want ducks for eggs.... but slowly slowly catchy monkey....

Uh... picture the scene....

I'm sat at the PC, hair all over the place, coffee cooling waiting to be literally inhaled to wake me up, I have me yellow nightie on, with a black cardi, brown pj trousers & my wellies (cos I went to empty the ash pan).......

And a HUGE grin plastered on my face!!

We do spanish tortilla type omelettes with our duck eggs. You can add any veg you like really although it is best with diced fried potatoes as well. We also add chorizo but first fry off the fat then fry the onions, spuds and whatever else you like in the chorizo fat. It's very rich so I usually have some left over the next day which I like even better cold for my lunch. 4 eggs should do enough for 3-4 people.
