Strawberry Curd

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Strawberry Curd

400g pummet of fresh strawberries
2 dessert spoons cornflower
4 eggs
325g caster sugar
225g butter
Squeeze of lemon juice

whisk eggs and put into sauce pan, whisk strawberries and add, along with the rest of the ingredients, to the eggs, stir with a balloon whisk over a medium heat, untill it thickens....whisk for another min, then pour into sterilized jars....leave to cool...will keep for 2-4 weeks.

to make lemon curd
replace strawberries with juice and finely grated rind of 4 lemons
use 1 dessert spoon of cornflour instead of two....other wise follow as above

Interesting!

My mum makes lemon curd and lime curd, i prefer lime as it is sharper and ballences the sweetness better

strawberry works very well...i guess you could do it with any fruit as long as you get the balance right.....and remember to squeeze lemon juice with which ever fruit you use.

kiwi would be good ...might have to try that next :lol:
