Busy day today.

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Busy day today.

Post: # 142071Post Odsox »

Today is going to be a very busy day for me.
Just after Christmas we bought a cheap frozen turkey and it's been snoozing in our freezer ever since. But today I have it defrosted and I am going to make as many meals from it as possible.
I plan to make Turkey Chasseur, Sweet & Sour Turkey and Chinese Turkey with Cashew Nuts. Also coming up tomorrow when I've boiled up the bones, will be a gallon or so stock turned into Celery Soup, Mixed Vegetable Soup and Minestrone Soup for OH to take to work for lunch. I have the onions, garlic, celery, leeks, potatoes, carrots, parsnips, dried beans & bottled tomatoes from the garden, a cheap 45c pineapple from Aldi, load of cheap mushrooms from Lidl and some left over cashew nuts, so it will be dirt cheap to make.
Most apart from today and tomorrows dinners will be frozen in the correct sized portions and should provide about a weeks supply of ready meals.
This has now become a yearly ritual and is a nice cheap way to provide semi-instant meals if you don't mind making them all in one day.
Anybody else as mean, sorry thrifty?

Sounds like a very busy day. I'd be interested to know just how many meals you manage to eke out from the bird.

Don't know if I could manage to eat a weeks worth of turkey meals in one go (although I'm sure thats not the intention!) - we're always fed up with turkey by the 27th December.

:santa: Will you have a "Christmas" dinner from it?

No, that's reserved for Christmas :reindeer:
It is a supply of cheap(ish) meat. I have now boned it all out and the bag it came in says it was a 4.4kg bird, but I didn't weigh it.
I now have 2 large breast fillets and a big bowl of not so neat pieces, in all comes to just over 2.25kg.
I also have a huge cauldron of bones simmering away on the rayburn with a fair quantity of meat still attached (which will be picked off after and used as dog food).
There is probably 8 servings off the breast meat and probably 6 off the bits when made up, so about 7 days worth for the 2 of us, then about 2 weeks of soup for lunches.
And no, it won't all be eaten in one go ... today & tomorrow fresh and the frozen ready meals as and when.

Same at my house, that's when I bring out the pressure canner. I think we still have about 8 pints of turkey from the Thanksgiving/Christmas season.
