What is your favourite cake?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

My favourite cake has got to be farmhouse carrot cake, it is full of flavour and lovely and moist.
recipe:
1lb caster sugar, 8 fl oz vegetable oil, 4 eggs, 8oz carrots(finely grated),8oz plain flour, 1.5tsp bicarbonate of soda, 1.5tsp baking powder, 1tsp ground allspice, 1tsp ground cinnamon.
for the icing:
8oz icing sugar, 8oz soft cream cheese, 2oz soft butter,2tsp vanilla essence, 6oz chopped walnuts or pecans.

In a bowl combine the caster sugar, oil, eggs and carrots and beat well for 2 mins.
Sift the dry ingredients into another bowl and add batches of the carrot mixture, mixing it well with each batch.
Preheat the oven to 375*f or gas mark 5.
Grease and flour 2 tins(I use 9"tins), divide the mixture between the 2 tins and bake for 35 - 45 mins - cool completely then beat all the icing ingredients (apart from the nuts) until smooth.
Then sandwich the cakes together with approx.1/3 of the icing and then spread the remainder of the icing over the top and sides of the cake and sprinkle the nuts around the edge or rim of the cake.
Really simple to do and tastes amazing. :wink:

Does anyone have a recipe for a really good moist apple cake? I've got a couple of recipes but the cake comes out a bit more dry than I want it - still really nice, it's not that I overbake it (I think), just that the recipe I'm looking for is a more moist cake.

Not explaining myself very well (again)!

Mums Green Tomato Chocolate fudge cake.

Mix:
- 2.5 cups flour
- ¾ cup of cocoa
- 2.5 teaspoons baking powder
- 2 teaspoons baking soda
- ¼ teaspoon salt
- 1 teaspoon cinnamon
Cream:
- 150gms butter
- 1 cup white sugar
Add:
- 3-4 eggs
- 2 teaspoons vanilla essence
- 2 teaspoons orange zest
- 2 cups grated GREEN tomatoes
- ½ cup of milk
- OPTIONAL – ½ cup Either chocolate chips OR chopped walnuts.
Combine wet and dry mixes and then cook for 60-80 min in an oven on fan bake at 160 Degrees Celsius or 180 normal. Skewer test should NOT come out clean – slight trace on it, just not raw and gooey.

Cool and turn out of tin. Enjoy without icing – it is easily moist enough.
