Yep would be fine without the coffee :)

After making the basic sponge you can put pretty much anything in there...

One tip if you're making chocolate cake though is to take out 1 oz of the flour to replace with 1oz of the cocoa powder, that way the cake doesn't get awfully dry

I could choose many. In the end, I prefer plain cakes such as 1-2-3 or pound cakes, and the ones with less butter or oil. Am slowly experimenting with adapting the recipes to teff flour.

I have a 1977 edition of the Moosewood Cookbook by Mollie Katzen, given to me by a very dear friend in the States. It is my absolute favourite (and now falling to bits and held together by much sellotape) and I would really recommend it to anyone who enjoys good wholesome veggie food.

My favourite cake is from there, it's their Carrot cake. Absolutely delicious. I sometimes struggle with their ingredient and/or utensil names but can usually work my round them; they are often just called something else in the UK.

I am not really a cake fan, my downfall is savoury snacks. But I do like walnut cake. I never make cakes either, but I might try it if anyone has a foolproof recipe for a cake with nuts in!

Another fool proof one - very simple, actually a war time recipe, as it uses no fat apart from the nuts.

250g ground hazelnuts
250g flour (I use wholemeal)
4 heaped teaspoons bakingpowder
125-200g sugar
1 egg (optional)
enough milk to make a stiffish batter

Optional flavouring:
cocoa
coffee
cinnamon
vanilla extract

Mix all dry ingredients, add egg and milk, fill into greased loaf tin, bake at medium heat for about one hour.

For birthdays we use double quantities, bake it in a spring form, and cover with chocolate!

I love any cake with icing. I love icing so much that when I was little I used to have icing sugar on my rice krispies! It would congeal with the milk at the bottom and be all lovely.

Now I am vegan, cake isn't in my life so much unless I go to Canterbury for the day, or learn to bake. However, I am currently teaching myself vegan cookery and have recently mastered the wonderful lemon almond 'cheese'cake. (Tofu in place of cheese). lovely stuff. And everyone else likes it too!

I made a beetroot chocolate cake the other day. Its strange, probably unsurprisingly it tasts like beetroot a little bit, which I was hoping it wouldnt cos I am not a huge fan of beetroots.
Put lots of nice icing on though and that seems to have taken away the beetrooty taste!! Defying the point?

My son is vegan,so I tend to just make all cakes vegan, as it is easier than making 2 types of everything.

I always used to be afraid to try , but then discovered that soya milk and a teaspoon of baking powder was a great egg replacer. Now, there's no stopping me

You can easily make that hazelnut cake I posted above in a vegan version... Don't use the egg, replace milk with soya milk.

I love other people's coffee or chocolate cakes but I've never made any that weren't complete disasters. I do like to experiment though.

About half a box of silken tofu is equivalent to a large egg, for baking. If you're using baking powder or bicarb as a rising agent use an equivalent amount of vinegar (added as late as possible) to make it work. And of course swap the milk for a veg milk of your choice. Voila, any cake recipe veganised.
