What's for dinner?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Hey Milims you don't have to apologise to us. Remember we're only "ish".

I had bought fishcakes last night with oven chips (those were home made) and veg. I've no idea what I'm going to have tonight. There's just me so it'll be something very simple and quick. Probably pasta and veg in a tomato sauce with some parmesan.

Well tonight it will be omelettes from our own chickens eggs.

Thank you for the recipe Kiwi - I'll definitely give it a go!

Me too Annpan.

Could you persuade my OH that this is absolutely crucial to our survival.

OK maybe overstated a little there, but desirable.

BTW - Butternut squash korma (mother only likes korma so we bung chillies in after serving hers) tonight.

Burgers and chips are off... I forgot to ask JohnM to pick up some rolls on the way home and I was too lazy to bother making them myself (made flapjacks though, yummmm!)

So it is standby pasta and tomato sauce, from the freezer. (does everyone call a ragu style sauce tomato sauce??? I only ask because my sister thought I was talking about tomato ketchup :? )

I have a confession to make.

I didn't have omelette last night.

We had B****r K**g.

Excuse is my motorbike broke down on the way home and I spent 3 hours waiting to be recovered by RAC. So got home at 9 and felt very sorry for myself so cooking was not on the cards.

I seek ish absolution. :(

No absolution needed. 'Twas no transgression.

We all need balance!

I had instant potatoes and canned peas. I quite enjoyed it. I get tired of making everything from scratch. It was nice to make my own "fast food".

Thank you LBR!

I agree sometimes is nice to eat stuff that you know is bad but still tasty.

Occasionally I like to go retro and have something like mini kievs and supernoodles! Ah the taste of my childhood! That and crispy pancakes, what were they all about!!?? :?

We have a worse problem in our house - I make my own ketchup - and it looks very like pasta sauce - but not so good on pasta!
Well I didn't do omelettes last night - we had cheese toasties instead. I had some of the half cooked french breads popped in some cheese, ham and onion and bunged them into the George - very much like panini! Yum!

It's a very rainy day, and I decided to have dinner for breakfast. I bought a giant bunch of mustard greens yesterday. The gardener went and cut them fresh for me. I'd never eaten them before.

Easy Greens-Potatoes Casserole

I washed the greens in warm water, cut them in bite-sized pieces. Cooked them in approx. 1 cup water, in a covered stock pot.
Tossed in a veggie bouillon cube.

Put dots of butter in a baking dish. Sliced some potatoes to cover bottom. Sprinkled on black pepper.
Put the cooked-down mustard greens on top of the spuds.
Poured liquid from greens over the whole lot. (About 3/4 cup.)
Grated monterey jack cheese over it.

Covered with foil and put in oven at 350 degrees (Fahrenheit) for 45 minutes.
Uncovered, and cooked at 425 degrees for 30 minutes. Cheese was browned.

A scrumptious, very repeatable casserole.

The mustard greens have a sharp zip to them. Lots of character. Very fresh. They pep up the spuds nicely.
