For those whose butternuts survived the summer.
Spice mix, enough for approx 2lb butternut:-
2tsp fresh ground cumin
2tsp paprika
2tsp turmeric
2 cloves garlic, chopped small
3/4tsp cayenne
1/2tsp fresh ground black pepper
1tsp salt
2 1/2tblsp lemon juice
2tblsp oil
Mix into an emulsion paint thick, paste
Sauce mix:-
250ml yogurt (sometimes needs a little more)
1tblsp ground almond.
Peel, dee-seed and cut butternut into bite sized chunks.
Cut an onion into same size bits.
Place in a deep dish and pour spice paste over.
Cover and leave for 2 hrs at least.
Pre-heat oven to Gas mk6.
Oil a shallow tray and bring up to heat on the hob.
Place butternut, onion, spice paste on tray and spread out.
Place in oven and cook 45 mins/1hr checking and turning frequently.
When cooked place on serving dish.
Place baking tray on hob over low heat, SLOWLY add yogurt, stirring spice paste, burnt onion bits in.
Once combined, thicken by adding almonds and stirring in equally slowly.
Pour sauce over butternut chunks.
Serve with an onion, tomato and cucumber salad and mop up the sauce with Na'an bread. (Recipe elsewhere on site!)
(I once tried this using pumpkin which went to mush and wasn't at all appetizing.)
