I love pickled beetroot - worth every dyed digit.
My mother just made us this years batch of picallili which we're waiting to dive into, can't eat it for a few weeks - torture!

I have a masive dislike of beetroot, sorry. It looks great but Myself and my OH can't stand the stuff.
We've tried cooking it in different ways but to no avail.
Same with aubergine: yeulch.

This year I made my first home grown pickled beetroot, I did my own spiced vinegar too...most of the spices I have are quite Christmassy (Star Anise, cinnamon, cloves and black pepper)
It has turned out to be the most rich, decadent, delicious pickled beetroot I have ever tasted - I am salavating just thinking about it.... drooool! and JohnM doesn't eat it... so it is all for ME... mowah, ha, ha, ha

There's a panic on because I have got to 19 pots (think marmalade sized ones) and the kids think that we can't possibly eat that much pickled beetroot even if it's brilliant.
And I've still got half a standard black bucket of beetroot and no idea what to do with it if I don't pickle it - oh and there's a few more on the allotment.
Ideas people?

Hi Flo, if you're not veg. then there are some recepies that incorporate beetroot with casseroles.(pork is particularily good).
it's either one or the other, or neither of the two.

just found a recepei for a wine. :4lb beetroot, yeast,& nutrient, juice of one lemon, 4 cloves, 1oz bruised root ginger, 1 gallon water, 3&1/2 lb sugar and citric acid,grape tannin. I will post method, if you like, but, i warn you, i'm not too good at this computer malarkey!!

Mmm I love beetroot - it's quite versatile too. Beetroot cake, beetroot curry (sublime!), roasted beetroot, beetroot chutney - the list goes on.

Beetroot curry???? Now that sounds interesting.
C'mon, Shirl Girl ... spill the beans. Is this just a curry with beetroot as the main ingredient, or is there something just a little special we should know about?

Hmm - unfortunately I'm vegetarian and also allergic to alcohol so wine is not the best idea.
I had discovered a number of good recipes that were not vegetarian
I do have a recipe for beetroot chutney that I might just try when I've been down shop and got the extra spices I need.

If you have small, tender ones you can grate them raw into salads. Unpickled cooked ones are also great in salads. And if yougently stir-fry an onion in butter and then add (unpickled) cooked, diced beetroot and cook them for a few minutes together that goes well with cooked potatoes and an omelet. Beetroot is really sweet, I can imagine it is great in a curry. Recipe, please...

Beetroot store well - I wish I had a supply of them for the winter! I'm not too keen on pickled anything, but I love beetroot salad (made with cooked beetroot). Usually have a bowl of that on the go in winter.

It's just a curry with beetroot as the main ingredient. You spice it however you fancy :-) I use tomatoes, garlic and onions in mine and usually it's a spoonful of madras/vindaloo by a well known company that begins with P. The colour is absolutely fantastic. I use raw beetroot cut up into small chunks but I imagine you could use precooked (but not pickled)MKG wrote:Beetroot curry???? Now that sounds interesting.
