Raisin wine

Post: # 124494Post MKG »

Following the marrow rum section, I thought I'd stick a couple of raisin wine recipes here (which I promise I will). But just to start you off, here's a line from an eighteenth-century recipe. It cheered me up no end, but I wonder just how far some winemakers will go ...

Being thus prepared put in your fruit 7lb to an English gallon of soft water & stir it very well with mashing stick twice or thrice a day till your fruit rises & swims atop of the water, when it must be carefully watched, & as soon as it begins to subside, put in your cock & let it run off as far as it will run

Have you tried that?

Must admit, I just stick it into the demijohn after a week or so... I'm really looking forward to this - had a bit of a taster when I was racking the first lot, and it seemed quaffable!

My promised raisin wine recipes have turned into a treatise - should be ready in the next day or so. Conceited, or what?

Speaking of raisins. Does anyone have a recipe for Black Beer and Raisin wine?

MKG, Did I miss the raisin wine recipes? If so, could you please point me in the right direction. Many thanks. Your alcoholic water was an amazing success. The plumber says it should be on tap! pbf

No, you haven't missed 'em, pbf. I'd forgotten, so thanks for the reminder - I'll get the things up in the next couple of days :thumbright:
