Hi everyone, I have dug up my shallots today, and although some are a little small I am generally pleased with the results.
I bought pickling shallots but what I need to know is whether I need to dry them out before I pickle them or if I can just peel them and pickle them straight away.

The main reason for drying shallots is that they store better if dry. I'm sure you can go ahead and pickle them straight away.
