Went out to pick a few courgettes last night, lifted some leaves aside and of course found a thing the size of <insert humorous reference to something very big> which my daughter couldn't even carry. Even as marrows go it's very big.
So I reckon halve it lenghthways, de-seed it, blanch it (somehow!), fill it with whatever delicious concoction you people are about to suggest, wrap it in tinfoil and bake it.

I don't really have a recipe for these things - I just use whatever comes in handy... For bulk, oatmeal (or barley), or breadcrumbs, or rice; for protein add egg (also binds the stuffing), lentils or other legumes, grated cheese; for flavour onions, mushrooms, other veg, herbs and spices - it's sooooo versatile! You could do a curry stuffing; or a tomato and herby one with cheese on top.

Easier to cut into about 3" rings, deseed using a desert spoon to scoop out from both ends. I usually give them a twirl in the microwave then roast them as you do.

I'm quite partial to a spicy couscous filling (whatever you've got in the larder - but something like, onions, garlic, ginger, cumin, paprika, tumeric, cinnamon, sultanas, sundried toms, honey and nuts.
Soak couscous and sultanas. Fry onion until soft, then add garlic and ginger for another couple of mins. Add spices and fry for a few more mins. Add toms (you can just use regular tomatoes) and seasoning. Add honey, nuts and couscous mix. Test seasoning then pile in marrows. Cover with foil and bake for 40-50 mins until tender.

I believe we have all those ingredients. Though we only have walnuts and I don't think they'd be right. Oh wait we have a few pine nuts. Yesss.
I like the rings idea. I think I'll go with it. And we have an aubergine. I'll toss it in, what the heck.
Yum yum, garlic and onions from our own garden. And honey from that very nice but slightly eccentric woman down the road who keeps bees. She has a hive of nice bees and one of angry bees. I think she gave us the angry honey. Ginger and couscous from that nice Mr. Sainsbury in the town.
