
as I've mentioned, I'm not veggie or vegan, but this is a veggie recipe.
I took some bell peppers and a small squash and some garlic. I cut and peeled the squash and roasted it with some garlic cloves. The bell peppers I left whole. Once the squash was tender, I removed from oven. I stuck the peppers in a plastic bag to sweat and aid removal of the skin.
Then mashed the squash and garlic together with some mixed herbs (mostly thyme), and a peeled, chopped tomato. I set this aside to get cold.
I peeled the peppers, de seeded them and chopped into strips. I then chopped an onion, two mushrooms, thinly sliced half an aubergine, grated a turnip and then grated some cheese. I used Derby cheese and some Lancashire cheese too. one is like cheddar, the other is a crumbly tangy white cheese.
I rolled out some puff pasty to the size of my tin (a big one), greased my tin, laid the pastry in and scored around 1/2 in from the edge all the way round to make a border. I then filled in the middle with a layer of the squash goo, followed by all the rest of the veg, a sprinkling of salt and pepper and topped wth the cheese. I cooked for 20 mins. I should have coated theborder with egg or milk to make it go dark but I forgot. such is life hahaha!!
there we have it, veggie tart which my husband and daughter both ate. husband is very much a meat and two veg kind of person, daughter is also fussy when is comes to veg-based meals.
I served it with mixed salad leaves from the garden and buttered new potatoes.
I'm going back for a third slice.
