Hi all ,anyone got a good mint sauce recipe?very ordinary I know but I have never made my own and am not sure which vinegar to use?malt or white wine? what ratio to mint?can't fine one in any of my books,maybe it's too simple!!I have shed loads of mint ,as I am sure does everyone at this time of year,and a half shoulder of british lamb in the freezer for sunday,so if anyone can help I'd really appreciate it.

Mint Sauce
Ingredients
bunch of mint (it really doesn't matter how much)
pinch salt
4 tbsp boiling water
4 tbsp malt vinegar
1 level tbsp caster sugar
Method
1. Strip off the mint leaves, sprinkle with salt and chop finely.
2. Place into a jug, add the sugar and pour over the boiling water, stir and leave to cool.
3. Stir in the vinegar and taste.
4. Add more water or vinegar and adjust seasoning to suit your taste.

yep thats what I use. I put a jar in the fridge with lots of chopped mint in just malt vinegar for the winter and it keeps really well. When I ant to use it I just pop a teaspoon in a bowl add sugar and some veggie water and hey ho ... mint sauce ...

Never mind mint sauce. I spent 4 days straining bramleys, mint and sugar last year to make an absolutely gorgeous mint jelly. But can I find the recipe? Can I 'eck as like!

I don;'t have a mint plant so I use the contents of a mint teabag lol!
