Having made quite a few litres of utterly delicious ice cream, I have been struggling to find things too make with the egg whites I have left over.
I started off making meringues, which are now also sitting in the freezer then i made some coconut pyramids (not such a good idea with a diabetic, coconut loving husband!) and now i have just made some more ice cream so I have 4 raw egg whites sitting in the fridge.
Does anyone have any ideas? If all else fails I'll just make more meringues and freeze them but I'm hoping there might be some better ideas out there!

Had to groan at the warning given after the tip about face masks! Would someone alergic to eggs even consider spreading them on their face? Duh!

you can just freeze the egg whites as they are - takes up less freezer space than meringues..

As you seem to have a dog, may I suggest feeding him/her the occasional omelette ?
Mine loves them and gets one now and again when eggs start to build up to silly proportions.

You can use the egg whites in a yolk-less omelette - just whip the whies to a soft peak, put in pan/skillet having your filling ready, add, when it starts to set, salt and pepper, etc to taste, fold and you're done.
Also, why not just use a whole egg in the ice cream? I've been doing it for years, with duck eggs, and it doesn't noticeably change the texture of the ice cream at all.
