Hello every-one! (i'm a newbie!)

I live on a smallholding and we have a wee orchard wich we get apples from for cider. i was wondering how to make Elderflower champagne as we have a few elder bushes about the place and in hedge rows.

Is it a hard method? we have all of the equipment for making cider!

and this is my recipe

which is slightly different. I know some people make a version that is fairly alcoholic - mine is more in the ginger beer league. Very easy to make I would say.. though you might need to wait for the flowers to come out in June ish !

(although saying thsat I reserved a batch of concentrate and made some in time to drink at the ]winter solstice)

I fancy making some elderflower champagne. The ish recipe calls for screw cap bottles.... do they need to be glass, or will plastic suffice? The recipe doesn't have yeast in it ... is that right?

It doesn't have ADDED yeast in it. There will be some yeast cells sitting on your elderflowers.

Can I freeze elderflowers to make champagne later on? Or will that kill of it's natural yeast?

Am keen to make some but am so busy right now!

Also, can I use cider vinegar instead of white wine vinegar.

You're probably OK. Freezing doesn't kill yeast.
