what do you want to combine it with? I doubt you could make elderflower jam without another fruit in as it would have no substance (but a lot of flavour!!) What about eldeflower and gooseberry or apple?

you could adapt the dandelion jam that's in here somewhere.

I've made a batch - but having trouble with setting. I used powdered pectin, flowers, lemon juice sugar and water.. but having to make up the quantities as I go along.. really tasty tho.

Try adding a small amount of pureed cooking apple. Bramleys are high in pectin.

yeh last year i made apple and elderflower jelly.. it just tasted of apple...

thats why this year i am just using powdered pectin.. which obviously is also high in pectin!

I think elderberries work better in jam than elderflower. Lots of tast, but a bit of substance too .... lovely with apple.
