are they meant to be really really bushy? or should I trim some leaves to make more flowering/fruit energy?!
4 out of my 11 are flowering nicely and they are outside...

Depends if they are bush variety or not.... most of them aren't.
You should be pinching out the side shoots. These are the shoots that grow BETWEEN the stalk and the leaves ..... they themselves will go on to produce side shoots ... hence the bushy appearance.
You will be able to spot side shoots that have grown too big as they will be a really vigorous growth.
Cut them off ... do it on a nice sunny morning.
