As we'll all soon be harvesting veggies faster than we can turn around, never mind cook them ...... please would anybody who has some really fast ways of turning veggies into a meal post them here.
I'm thinking of things for lunches so they can be prepared quickly before getting on with the day's work.
Here's one from me ....
Courgette Pasta
Chuck some pasta (I like wholewheat penne) into a pan of boiling water.
While that's cooking, cut some baby courgettes up into sticks and slice some spring onions. Saute them over a highish heat so they're hot but still crunchy.
Drain the pasta, chuck in the courgette and onion and add a dollop of pesto. Stir and eat, with some home-grown salad.

I don't know how to make it, but I had a courgette gratin a week or two ago that was brilliant, and you can stick it in the fridge and reheat it later, so I wouldn't be surprised if it's freezer-able too. So you could just gratin-up a load of veg one night, scoff as much as you want for dinner, and store the rest for quick lunches
