OK - I thought I read that when u rack wine, u then need to top-up with sugar water and this would normally be done 2 or 3 times. When I mentioned I had done this on a wine forum (due to the fact that my wine had stuck) a bloke said that hadnt been necessary and that adding extra water was necessary only to increase the alcohol content. Do u all rack and top-up several times or just bottle after the first ferment has finished?

depends on the wine - my rhubarb wine was clear enough to bottle right after it finished, without racking to another demijohn first
my mead, I racked to another demijohn, tasting it on the way. it was working out too dry for my test, so added sugar water to top up. I dont normally top up unless i want to add more sugar or if the level has gone down alot.
