just made the soup mentioned in "It's not Easy being green" - squash soup (only for four, not a gazillion).

After a troubled experience with a few patty pan squashes I was nervous, but everyone had raved about butternut squash. Not grown myself this time, but having tasted the soup, I will attempt to grow it in future alongside the pumpkins.

Squashes of choice
Garlic
Chilli
olive oil
stock

Roast the chopped up squash, skin on, for an hour, after laying some chopped chilli, and peeled garlic on it. Drizzle with oil aswell. Scrape it out into the stock, reheat and serve.

As advised I stirred some quinoa into it (and had bread how greedy), and it was very good.

That does sound delicious.... I've got butternuts planted - in fact I've gone squash mad this year.. pumpkins, butternuts, blue bananas, and a mixed packet of seeds that Andy sent earlier in the year. All doing reasonably well for 'up here'

SOunds great, but remember squash, pumpkins and courgettes can cross-pollinate so don't expect saved seed to come true (unless you prat about with cloth bags come flowering time)!
