OMG thank you for that, that looks like the kind of fudge I like, all grainy and not chewy like those 'souvenir of xxx place' type fudge (if you know what I mean). I haven't made fudge or any sweetie type thing since I was about 11 so it's one of my NY resolutions to do so.
I bought a tin of that Carnation caramel a few years ago when in England, didn't know what to do with it so it sat in the cupboard for ages, eventually made some sickly creation out of it, then realised it was the same thing as dulce de leche, which is the same thing as confiture de lait..... which is sold everywhere here. Duh!
