Flowering Quince fruit

Post: # 24634Post Mandyz »

I'm looking for recipes for my flowering japanese quince fruit. I assume a preserve of some kind would be my best option. I'm looking online, but not finding much that's useful. Perhaps someone here has suggestions.
Please and thank you :)

Did you find a recipe for qunce jelly? That's what I would do with them. If you haven't got a recipe, let me know - I'm sure I have one in a book.

And I believe that putting a little quince in with the apples when baking an apple pie gives it a lovely aromatic flavour.

No, I haven't found any actual recipes. I'm thinking I might just use a crabapple jelly recipe and substitute the quinces...

Well here is a recipe for quince jelly from my Reader's Digest Food From The Garden.

2Kg (4lb) quinces
juice of 2 lemons
3L (6pts) water
Sugar

Scrub the quinces, cut into small pieces and put in a pan with the lemon juice and two-thirds of the water.
Simmer until quite tender, then strain for 15 mins. Return the pulp to the pan with the remaining water, and simmer for another 30 mins.. Strain and mix the two batches of juice.
Measure the juice and bring to the boil, stirring in 1lb of sugar to every pint of juice (750g to 1L).
Boil until setting point is reached.

It also has a recipe for quince and apple pie. Basically use a half pound of quince to three-quarters pound of apples. Simmer the quince in honey, butter and water for 45 minutes then add to your apples and make an apple pie as usual.

The book also says that quince makes a great jam because of its high pectin content.
