Oat Bread Recipe

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Oat Bread Recipe

I picked up on a whim a bag of oat flour. I made a fairly successful bread from this (I'm particularly pleased with the crust because the children are eating it and making "yum" noises :mrgreen: ) using 25% oat flour and 75% unbleached wheat flour, but I did rather just make that up on the hoof.

Anyone got any recipes to share? I'm on a campaign to get this family eating more oats 'cos they're good for the little blighters :salute:

Porridge, of course!! I wish I could eat it (hate the texture despite trying regularly) but I make it for who OH loves it.
I add oat flour to my bread too and also put oats on the top.
I expect good old flapjacks are already on the menu?? I add seeds and nuts and coconut to the mix to make it even better! Make it with honey if Golden Syrup is not available...or brown sugar.
Add oats to crumble mix for a nice chewy texture.

You might like to try my current favourite soda bread recipe using oat flour?

No, even fine oatmeal is much coarser - but you can make your own oat flour by grinding up oatmeal.

I've got a rather interesting recipe for Baked Oatmeal (it seems it's quite a popular breakfast in the US) although I've not got round to trying it. I think it's a bit like a solid, pre-seasoned porridge that you can make once a week, portion, then you've got breakfasts or snacks sorted out for the days to come.

1 ¾ cups milk (or non-dairy milk)
1 tablespoon ground flax seed
2 cups rolled oats (not quick cooking)
¼ cup brown sugar
⅓ cup raisins
¼ cup chopped walnuts/or almonds
1 ½ teaspoons baking powder
1 teaspoon cinnamon
¼ cup oil

Preheat oven to 375F.
Lightly coat a 7"x9" or 8"x8" baking pan with non-stick spray.
Combine the milk, oil and flax seeds and set aside.
In a separate bowl, combine all remaining ingredients, stir in wet mix then pour into prepared pan.
Bake for 35-40 minutes.

Serve warm with warm milk or cold on it own.

Variations.
Substitute different dried fruit.
Add a mashed banana.
Reduce the oil and add peanut butter.
Reduce sugar if too sweet.

I will give this a go one day.

Thanks for the replies. My girls are a bit... French, so regard porridge with a fair degree of suspicion ("And what eess theesss? I think you make the wallpaper to the wall stick with theesss, no?") but the reminder of the joys that are flapjacks & oatcakes are good ones. Also, it's been a longtime since I ate soda bread, so I think I'll pick up some butter milk tonight and have a bash.

ahh. I would just buy oatmeal and grind that into oat flour but I myself do use the oatmeal "as is" in the bread recipes and count it as flour, and yes of course at an percentage, would have to look it up if you're interested.

eating more oats: make oatmeal/ porridge, use in making by replacing at least 25% to 50% depending on the kind of recipe (my crumble mix, is half oatmeal half flour), and there are also savory dishes to work them into.
oh and flapjacks! and cookies! me loves oatmeal cookies.....
