Toasted pumpkin seeds
I am inundated with pumpkins because a neighbour likes growing them but doesn't like eating them. I've just used one to set off some pumpkin wine and I'm also going to try the Stew in a Pumpkin recipe. I now have a huge pile of pumpkin seeds. I'll save some for planting next year but I know there is some way of dipping these in brine and toasting them in the oven. Has anyone done this? Do you have a method for it? Thanks in advance and back to the chopping... Any other pumpkin recipes would be welcome. Do they make chutney/jam etc?

Pumpkin Chutney
makes about 2 and a half pound
Ingredients
1lb Pumpkin, peeled and diced
10 fl oz Malt Vinegar
1 Ib Light or dark brown sugar
1 hot Red Pepper, deseeded and finely chopped
1 oz Fresh Root Ginger, peeled and finely chopped
1 oz Garlic, finely chopped
4 oz Onions, finely chopped
4 oz Raisins, finely chopped
1 Tablespoon salt
Method
Put the Pumpkin in a pan with one pint water, bring to the boil then cook for about 15 mins until tender.
Add the vinegar and sugar to the Pumpkin, stir well and bring to the boil. When the sugar has dissolved add the Peppers, Ginger, Garlic, Onions, Raisins and salt and cook rapidly for 35-45 mins, stirring well.
Leave to cool then pack into warm jars and store in a cool place for a couple of months before opening.
This is wonderfully sweet and tart all at the same time.
As for toasting the Seeds - I place the Seeds in a big roasting pan - spray with olive oil and lightly dust with salt. Then roast in a hot oven (about 200 degrees) for 20 mins - shaking the pan a few times during roasting to flip the little blighters over.
But they are delish!

I've made nice jam with them in the past - either just pumpkin, with a bit of ginger and/or lemon to add flavour, or mixed with some tart apples 50/50.Graye wrote: Do they make chutney/jam etc?

I was actually looking for a Pumpkin Seed Butter recipe for you as this is WAY expensive to buy in the shops. Well I didn't find that particular recipe but I did find lots of others. Hope there's something there you like.

All you need is a largish saucepan and a supply of second hand jam jars (best with the anti tamper pop up lid).
