The world is your oyster dude, not that you can sow oysters that is just a figure of speech and not to be taken literally.
here are a few things I have in mine over winter, tuscan black kale, hispi cabbage, white lisbon winter spring onion, oriental brassicas, winter lettuce plus any darker lettuce seem to overwinter well, oriental saladini, winter density, egyptian onions, sow everything now while the soil is still warm, you need to get things large enough to be able to pluck leaves here and there, they don't tend to grow that much in the winter so bulk them up now and they should stand over winter
