Fudge - ish

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Fudge - ish

I'm trying to lose some weight and so we've not been buying or making any sweets, biscuits etc (not that we bought them that often). Anyway my Ma's off to stay with the gal for a few days so I made a pre-Easter Sunday lunch. Didn't want to make a big sweet and I've had this recipe knocking about so I made that instead.

Bean fudge (internet recipe tinkered with a la GA :lol: )
Gungo peas or any other pulse that holds its structure would do (the original recipe called for a drained tin of black beans) - about 6oz cooked weight
1/4 cup coconut oil, melted
1/2 cup organic, unsweetened cocoa powder
2 tsp vanilla
1/4 cup honey (the original used raw agave nectar)
2 Tbsp dessicated coconut

Blitz everything in a food processor until smooth. Press into a pie tin and chill.
Cut into small squares and eat.

The original recipe also sprinkled the top of the fudge with a little sea salt which I think would be really nice (I love salt caramel) - but I forgot :roll:

It is unbelievably delicious, full of healthy ingredients and so easy to make.

Wow, sounds lovely, and I have some beans which need using too! No Easter Eggs for my lot...fudge it is!

ooh sounds nice, and it looks like it's probably got a nice texture too.

Just made this Maggie and if the bowl scrapings are anything to go by, it won't be the last time.

The reason it took so long is I couldn't find any coconut oil, never seen it before, and I was looking in the wrong place as it happens.
I thought it would be with the creamed coconut and coconut milk, but apparently the logical place for it is with the olive oils.
I made it with butter beans and as I did it with dried ones and not knowing what 6oz of cooked beans look like when they are still dried ... I did far too many of course. So we will have cold butter beans with sage mayonnaise tonight with our salad. :iconbiggrin:

Thanks for posting it Maggie, there's not many sugar-free sweets about. :thumbright:

Oh good, hope you enjoy it.

I've been meaning to re-visit this and suggest making half portions (although I see no reason why you couldn't freeze some). We found that a couple of pieces a day were quite sufficient to stave any sweet cravings and by the end of the week it was starting to get a bit dry and crumbly.

Having said that it was just on a plate in the fridge, maybe if we'd put it in a box it would keep better. And I suppose it depends how much you can eat - there were just the two of us.

It's well worth making but I wouldn't call it fudge, it's just like chocolate truffles.
Whatever you call it thought, it's seriously yummy. :iconbiggrin:

Interesting you found coconut oil in your supermarket - I've been having to buy it online!

Did you note how it affected your BS, or didn't you check?

I poured mine into a square pyrex dish that has a plastic lid and it's still as fresh and yummy as the day I made it, Maggie.
That was 10 days ago, so it does keep if you have enough will power (I was away for 4 of those 10 days and OH is totally banned from even taking the lid off. :iconbiggrin: )

Oh yes, I checked and it was just fine.
For some unfathomable reason honey has very little affect on me.
When I first started down this road, I read on some site that honey is indeed good for diabetics, but it was on a bee farm website. :iconbiggrin: But it seems to be true (in my case) which is wonderful, as long as I don't take the P and stuff myself silly.
