frozen veggies anyone ?

I tried this last year, but waited to early spring to dig them out..FAIL :oops:

we had a quick freeze about a month ago, I chiseled out a few beets last friday.
roasted them with a couple yukon gold tators...AWESOME :cheers:

So this afternoon, I chiseled out some more. I had forgot about the carrots.
they are bigger than I thought they'd be. Tomorrow for lunch, roast veggies again
and maybe some fish soup :thumbright:

That looks good! Our soil isn't frozen yet, so can't compare. But our carrot and beet harvested now are tasty nevertheless.
