Weight Loss Recipes

I though since we had a good weight loss thread on the other board we could share some of our recipes here too. :grouphug: Share the fat busting love around, :lol:

Mt first is for a quick and simple lunch or could easily be a dinner too.

Pesto Pasta

1 big handful of pasta ( wholemeal if your feeling extra healthy)
1 handful of chopped cherry tomatoes.
1/3 sliced cucumber.
1 handful shredded spinach
1 LEVEL tablespoon reduced fat pesto. The trick is to make it a level tablespoon, not a heaped one :icon_smile:

Cook the pasta, add the other ingredients, stir and enjoy. Simples. :iconbiggrin:
If you cook extra it will keep for a ready made lunch box or snack the next day, if you don't mind it cold.

I done some no fat oven chips yesterday and they were a great success.

I peeled and chipped some potatoes in both thin Mac D style and proper chunky chip style and without washing the starch off I put them in the microwave for 2 minutes to " sort of" par boil them. I then put them on the tray in the oven and left them to brown up for 30 minutes. The thin ones were crispy to say the least but were edible, maybe 20 minutes for these but the chunky chips were oh so great.

No oil, fat, spread or sprays and they were really good.

Vegetable chilli, using veg in the fridge and a tin of red kidney beans, served with a baked sweet potato (less calories than rice but just as filling) Lovely ! :wave:

Sweet Potato and Spinach Curry

1/2 pint chicken stock made form Bovril
1lb sweet potato chunked
1 onion
2 garlic cloves
1 chilli or to taste
1 tablespoon curry powder (medium or hot depending on how you like it :angryfire: )
8oz spinach leaves ( or chard :dontknow: )
4 plum tomatoes, or 1 tin
salt and pepper to taste

Put the stock, onions and sweet potato in a saucepan, bring to the boil, reduce the heat, cover and simmer for 5 mins. Add the other ingredients stir well and cook over a medium heat for 10 mins.

Eat on its own or with rice.

Al if you put some fry light (oil spray)in the pan with the chips, make 'wells' in the chips and crack an egg into each well then put it back into the oven until the eggs are cooked how you like them, you have a one tray,healthy, low fat meal. Serve it with reduced sugar beans for extra fibre. :thumbright:

Don't bother the're horrible!

Celeriac & Fennel Bulb Rosti

Don't bother, taste nice but a real faff.

Curried Corgette and Barley Soup

Yuk!

wheat free garlic bread with Rice flour and Potato flour.

Please use instead of rocks in any civil disobedience.

wheat free Lasagne with Creme Fresh and Butter nut squash.


Simply cut out the middle man and through £25 down the toilet, be sick on top of the money, just to top off the experience.

This cooking everything from scratch, with wheat free, fat free, sugar free is hard!

Oh Yes! Here we go.
Coleslaw with Fat Free Yogurt, Sultanas and chopped Apple.

Repeat last meal, suplement with fruit smoothies.


I like the Slimming World chips too. Par Boiled is the pain, getting that just right, like the microwave idea.

I'm all about the seasonal produce at the moment, so I'm making stews with root veg. Carrot, parsnip, swede, celeriac, jerusalum arichokes, garlic and onions. It' so easy, just chuck it n the slow cooker all together, cover with veg stock and come back hours later.
It's filling, and the weight is falling off.

It's funny you say that cooking from scratch is hard Boboff, I worked in Maccy Dee's for about a year when I was 19, I was a student :roll: , but I have never been as skinny. I was only 11 stone at the time which was a drop for about 13 stone when I started working there and that was just over an 8 week period :shock: . Maybe all this good for you food is just stress because it all takes so long to prepare :wink: :wink: :wink:

Anyway my head is ruling over my laziness tonight and I was a good girl so this is what I cooked.

Friday Night Takeaway( Chow Mein)

2 cloves garlic
1 onion chopped
2 tablespoons worcestershire sauce
2 tablespoons soy sauce
mushrooms
carrots
chard
whatever veggies you want or like
Lean meat if you want it.
put the onions and garlic into a wok with the sauces. Cook gently until soft. sling in the other veggies and cook until soft or however you like them. Meanwhile boil some egg noodles and add them to the wok when cooked.

If you are adding meat then cook appropriately and add at the last moment.

Much cheaper than the chinese takeaway and you can use what you are growing or what you like. :iconbiggrin:

My favourite quick and low-fat tea is pasta with peppers:

Soften chopped onion in small amount of olive oil or even a dash of hot water.
Add 2-3 sliced peppers or any other veg and garlic
Throw in a tin of tomatoes then simmer
Cook pasta separately, by the time it's cooked the sauce will be done
Drain the pasta and stir into the sauce with about half a tub of low-fat cream cheese and season

This usually does dinner for both of us with leftovers for lunch the next day :icon_smile:
