Never tried the exact combination, but at university we tried making wine out of pretty much everything in the greengrocers at one time or another.

As I reacall, carrot wine was pretty good, carrot & rasin was better and banana was absolutely vile and a very strange colour to boot.

We drank it anyway.

Sounds odd to me, but there's no great reason why it shouldn't work. On the other hand, if you overdo the banana you won't be able to taste the carrot.

The usual thing with bananas is to use them in small amounts (no more than one pound per gallon, sliced, bring to boil in water, allow to cool, use the liquid only) to aid in clearing. They actually tend to delay clearing, but when the wine does clear it falls absolutely star-bright. That's the theory, anyway.
