Spicy tomato and lentil soup and cheesy griddle scones. First time since this thread started that I have made anything worthy of mentioning.
It took me from 5.30pm to 8pm though - I just don't have the time to do all this cooking.
Gets worse in summer when I don't have time at all and loads of veggies..... there's something wrong somewhere.

It took me from 5.30pm to 8pm though - I just don't have the time to do all this cooking.

Re: what have you cooked today
Spicey tomato & lentil soup sounds Yum yum MMM.
Can I count yoghurt that really made itself overnight as am still very excited about it
though not really cooking.
A baguette and a loaf this morning and onto cakes next. An apple cake and a bara brith once the fruit's finished soaking.
If I was more organised I could have cooked them all together and saved oven power but maybe that will happen next week
Made a lovely enchilada style lasagne earlier this week: Spicey chilli tomato sauce with green pepers, mushrooms and grated cheese layered between flour tortillas and baked in the oven. Had far too much chilli in but cleared my sinuses out

Scroll down a couple of postings to Susie Gee's recipe and add some ground cumin and coriander as well.

Bread and Susie Gee style flap jacks (sorry Susie I can't remember what you call them, they are the ones with coconut and raisins in). If anyone can find the recipe for these they are fab, everyone loves them here.

Re: what have you cooked today
Thanks MMM ... I see from the link that I claimed I was going to try the lentil soup in November ... ah well, only March now, so not bad going for me
Susie, I have made a batch of your honey oat bars every week since I discovered them also around November I think and they have totally replaced flapjack here.
Deeeeelishious. I am not a big sultana fan so I use cranberries & linseed instead. You are already famous amongst my family & friends who all adore them.
Might go and have one now in fact ...

Re: what have you cooked today
I did succeed in making a very nice rabbit stew last night, they are only £3 at my butchers and think I have made enough to last me days! Had no idea one rabbit would go so far!. I can still eat well on a dreadful budget

Re: what have you cooked today
Vegetable pie with cheese and herbs in the crust, with stuffing balls and whatever veggies were in the fridge at the time as a filling (though it works very well with leeks and either butternut squash or sweet potato.

more bulk cooking, I made 28 faggots today, so 7 more homemade 'ready meals' in the freezer for the days I get in tired.
